In the springtime, the old farmstead off FM 161 in Cass County, Texas, transforms into a vibrant sight as thousands of Crimson Clover flowerheads paint the fields fiery red. While not possessing the medicinal properties of Red Clover, Crimson Clover's flowerhead offers a delightful tea option, whether used fresh or dried. Its small seeds, historically ground into flour, can be harvested easily and even sprouted into nutrient-rich microgreens. Furthermore, as a nitrogen fixer, Crimson Clover serves as an excellent fallow crop, rejuvenating depleted soils and thriving in near-neutral pH soil with proper drainage.
