I Really Should Change My Mind About These Vegetables - A Signature Assignment with Social Responsibility in Mind
This poster describes an exercise in an undergraduate nutrition class that meets Texas Higher Education Coordinating Board (THECB) social responsibility objectives and is assessed using a rubric adapted from the Association of American Colleges and Universities (AACU) VALUES rubrics. It was presented at the Society for Nutrition Education and Behavior 51st Annual Conference held in Minneapolis, Minnesota from July 21-24, 2018.

A Signature Assignment Puts Vegetables on the Line
This is an unpublished manuscript that delves into the use of Signature Assignments (SAs) which are real-world applications that embed curriculum learning objectives in routine classwork and facilitate assessment of outcomes across classes and disciplines. SAs tied to key learning objectives demonstrate student growth and reveal areas where instructional improvement might be needed. Additionally, SAs tied to curriculum objectives contribute to program and university understanding of teaching strategies that promote student success.

Faith in Fat: A Multisite Examination of University Students’ Perceptions of Fat in the Diet

The Tourism Sector and U.S. Regional Macroeconomic Stability: A Network Approach
This article investigates how the structural mix of USA regional economies affects their volatility of economic growth using four exogenous sectors: Federal Government, construction, manufacturing, and tourism. Results suggest that a larger share of Federal Government employment in an economy reduces the variability of overall employment growth, while a larger share of construction activity elevates it. Results also show that recently manufacturing has not contributed as much to such variability, and that a larger tourism presence increases it. The increasing integration of technology in tourism offers significant opportunities for a network approach and innovation in regional development.

The Impact of Disasters on a Heritage Tourist Destination: A Case Study of Nepal Earthquakes
Article examining the degree of macroeconomic recovery of the Nepal tourism industry after a natural disaster using the autoregressive integrated moving average model (ARIMA). The study investigated the case of Nepal’s earthquakes in 2015 and examined the impact of the earthquakes on tourism inflows and GDP using time series data from 1990 to 2018.

Factors Associated with Conservation Participation by Local Communities in Gaurishankar Conservation Area Project, Nepal
This article examines how residents’ natural resource dependency and other social, economic, and access-related variables predict conservation participation.Overall, key findings suggest that conservation participation at Gaurishankar Conservation Area Project (GCAP)—a newly designated mountainous protected area in Nepal— needs to be improved with multiple outreach activities, especially to resource-dependent households.
