The Political Economy of Retailing Sustainable Food: Green Consumerism and Sustainability
In recent decades, the global impacts of unsustainable consumption and production patterns have become a leading topic of sustainability, and more recently, climate action discourse. At the policy level, green consumerism – an element of green capitalism – has been positioned as the pathway to more sustainable consumption and production (SCP) practices. Within this model, eco-labeling schemes are used to communicate various sustainability attributes, or conditions of production, to the consumer. This study set out to investigate whether SCP is achievable through green consumerism using a two-part case study that centers around the egg industry and specific hen welfare standards. The case study examines the effectiveness of egg eco-labeling schemes and related statements and images placed on egg packaging in informing consumers' purchasing decisions. It also examines the impacts of green consumerism on organic egg production in the presence of strong consumer demand for enhanced hen welfare standards. The results of the case study demonstrate that in the egg industry, green consumerism is not highly effective because consumers' purchasing decisions are often informed by vague and misleading information about conditions of production. Moreover, the presence of strong consumer demand has not resulted in enhanced hen welfare standards in organic production. …

Examination of Online Health Information Seeking Effectiveness: Case Studies of Online Health Communities in COPD Patients
When people access online health information, unfortunately, they have access to both clinically accurate and inaccurate information that they may then utilize to make informed personal health decisions. This research fills a gap in the literature of online health communities as they relate to chronic obstructive pulmonary disease (COPD). The conduct of this research required a multi-phased and multi-method approach, best presented in three distinct essays. In Essays 1 and 2, data gathering within two online health communities specific to COPD allowed this study to address three research questions: (1) what are the information needs of COPD patients that result in their participation in online health communities; (2) what are the information sources offered to the participants in these online communities; and (3) is the information obtained via those communities credible. Essay 1 harvested data from a moderated website hosted by a non-profit organization for patients with COPD and Essay 2 harvested data from a non-moderated Facebook group also serving this unique group. Data Miner, a Chrome extension designed to extract data, was used to collect data, key words and themes which brought an understanding of the health information needs of participants and identified what health information sources were preferred. …

My Jabez Journey: The Examination of Patriarchy, Power, and Privilege from the Lived Experiences of a Black Female Expatriate Christian Mathematics Teacher
Living and working abroad is one of the best ways to grow and learn about who you are and who you can become. The purpose of the project is to develop and articulate a radical reflexive praxis within the paradigm of the lived experiences of a Black female expatriate Christian mathematics educator. Grounded in the epistemological tradition of Black feminist thought, this study defines the intersectionality of my identity as a Black woman mathematics educator and explores ways it informs my interaction with students, parents and colleagues and inspires the quality of my instruction delivered in and out of the classroom setting. Through the qualitative practice of autoethnography, the use of personal narratives and field notes tell the story because storytelling adds context and allows the reader to both comprehend and participate in the experience. These narratives of re-reflection are used to explain how each of these identities were parlayed from a place of knowing and being known. Teaching is largely a white female Christian dominated profession and the tendency of the profession to propagate the traditional white male leader prototype confirms the need for more research for and by Black women educators. Comparing Media Usage of Binary and Non-Binary Transgender Individuals when Discovering and Describing Gender Identity
This study was conducted through in-depth interviews to examine potential differences between binary-aligned transgender individuals and non-binary individuals in regards to media usage when learning about, articulating, and explaining their gender identity. Results showed numerous differences between transgender people with binary-aligned and non-binary gender identifications in regards to social media preferences and differences in perceived media importance and effects. Additional information was found in regards to the age at which gender identity is articulated and the importance of individuality in comparison to one's gender identity.
